Can anybody give advice on brewing using honey in kits such as when to add how much etc. I’m thinking of adding it instead of sugar at conditioning stage 🤔

You want to be sanitising honey so if you are adding it at conditioning be sure to boil it up in some water first. Cant help on dosing rates as conpared to sugar sorry

As above, check the bottle of honey to ensure its been pasteurised. If it has you can add it at any stage. If not, then it will need 5 minutes of boiling to kill any nasties.
I've only used it twice and been moderately Dissapointed both times with very little honey flavour coming through. But both were added before fermentation so not sure if the yeast stripped it out. Never thought of using it as bottle priming.
But if you do, it will absolutely need dissolving in boiling water and added as batch priming or it will be very very messy trying to spoon it in to bottles!!!

As for sugar content, Google suggests 80g sugar per 100g honey. But I suppose each brand / local honey will be slightly different.

The type of honey can have a large impact on the flavour imparted, but you may be limited by the variety available in supermarkets. If you boil the honey, it will also strip out some of the flavours, it is better to pasteurise it by holding it at 60-65°C for 30 minutes, alternatively Campden tablets can be used to kill of any bugs.
