Suggest some hops please.

I normally organise my brews in threes and this time I don’t want to use the same hop twice so am after a suggestion for brew no 3. All brews will be around 5 per cent abv

Brew 1 is a malty American pale with pale, Munich, crystal, hoped with centennial only. Yeast Liberty bell

Brew 2 is a tropical pale, golden promise, carapils and oats hopped with citra mosaic and equanot. Yeast London iii.

Also have another brew on tap with citra and Columbus so that’s Columbus out too

Brew 3 will be a west cost pale/ipa with extra pale and a bit of caramalt, us05 yeast but undecided on hops.



Thinking simcoe, but what else? Amarillo possibly. Anyone got any suggestions? I want all 3 beers to be distinct from each other.



To recap no centinial, citra, mosaic, equanot or Colombus



All suggestions welcome!
 
Simcoe is great on its own, although looking at the other beers, I'd go with the piney, spice of Chinook. Even better with a dollop of rye in the grist.

ive actually got a rye pale ale planed after these three. Not sure I planned chinook in it though so something to think about.
 
Summit is a rather maligned hop but gives a fruity taste albeit not as strong as Mosaic and Citra so would make a good Pale/Ale. I use it in my Blondes/APA'sI did a Zeus and Summit Red Rye and it was nice with a piney Bittering and slight fruitiness infact I am going to brew it again but with Columbus instead of Zeus
 
Talus looks nice too. I've just been on the Cross My Loof website having a look at their hop guide...well worth a read! I'm liking the sound of some of the New Zealand hops and their own hop blends.
 
I've used some of there blends Clint, The Punked I have used 3 or 4 times and is quite good at mimicking a Punk style of beer athumb..

I might try that...also saves buying in lots of different hops and being left with part packets..but then a "user-upper" is always fun to do and they usually work out great.
 
I used CML the first time this week as I needed some citra for a dry hop. Hopefully it will arrive today.
 
Punk might be a good shout. So many hops in there but surprising none of those I wish to miss out so would work well.
 
Brew 3, talus hops on their own!!

Slight floral taste with huge juicy pink grapefruit finish.
I put 110g in whirlpool, and 140g dry hop, the aroma and flavour is amazing.Using 05 yeast.
