Lodainn, hi from Stirling. Likewise I have a Pinter 1 & 2 but have also moved on to All Grain. I have brewed a couple of small 1 gallon BIAB batches and now also have an all in one electric system that I will use when the weather improves.

That sounds exactly like the path I'm headed down.
Thinking off a small 1 gallon batch using a 7.8l pot I have and using one of the pinters to ferment.
 
Another unseasonable warm December welcome from Stirling to this most remarkable of forums. There's a broad range of experience and people brewing batches from a few to several hundred litres at a time.

Lodainn I’d go bigger with the pot if you can. Argos do a relatively cheap 11L one. I find that is just sufficient for 1 Gallon batches. You can push things up if you do extract and steeped grains.
