What Hop goes best with Summit

I have a 100g pack of Summit that I was going to use as a single hop IPA but I have been told that this might not be a good idea as it is a domineering hop which sometimes tastes oniony!!! Is there any other hop youd suggest that goes well with Summit and perhaps compliments and enhances it? I would be very grateful to know this and in a 40 pint batch would u use less Summit in it than the other hops? I use 100g usually in a batch so how much would u recommend i used of Summit and the other hop or hops in my brew?
 
IMO and I use Summit a lot it is not a domineering hop at all in fact I would say it is a middling hop that would be overshadowed by the like of Citra etc but would be a good hop to use in a IPA, Pale Ale with a Citra, Mosaic and any other strong C hops.
I use it on its own in a summer Blonde to give a fruity easy drinker and I have never had the oniony taste it has been maligned with so all positive from me athumb..
I would use 100g in a all Summit brew but keep the IBU's down by Whirlpooling as it has a very high IBU usually 15 to 18
 
I am a 100% extract brewer who only dry hops so I think whirpooling etc doesn't come into it for me. What would be your advice be to me adding it as a dry hop? 100g of it alone or a different amount added to another hop?
 
What temp is the extract done at do you just add mostly cold water like a kit or do you add water and heat it up at all. If you heat it up you do not need to boil as you can whirlpool the hops at 80C which is above pasteurising temp
I have never done extract only kits, BIAB and AG
 
I simply add a couple of kettles of boiling water and mix my extract and sugar...when the temp is low 20 degrees I pitch my yeast. I wait 5 days then add my hops inside a muslin bag. I then wait approx a week then keg/bottle
 
You could do a Hop Tea that is steeping the hops in say 80c of water which you have held back from the extract amount. I would boil the water then let it cool down to 80c then add the hops and let it steep for 30 minutes.
You could split the hops between a Hop Tea and a Dry Hop, I am sure some brewers who have done more Hop Teas and extract will pipe in to fine tune what I have suggested but the hop tea should help to keep the IBU's down as it is a high AA hop.
 
The oniony aspect isn't an issue anymore as the growers realized that it came from when they harvested it. They altered that and no more onion.
Not an IPA, but I brew an American amber with simcoe, summit, and saphir that's pretty good.
