I would just add something to the finished cider - I put around 30ml of Bundaberg Ginger Ale in the top of my home brewed cider to sweeten it up a little.
Other than that you can use fresh apple juice or pineapple juice.
I used to sweeten with Splenda while bottling but was never happy with the result
