hi all

I would like to sweeten my juice based ciders a bit.. any tips ?

I put a teaspoon of lidl sweetener in my pint pint of cherry cider and it made a little difference, but if I was to scale up for a 23l batch it would be a hell of a lot of sweetener !

The cider I make comes out slightly sharp, so I'd like to experiment with taking the edge off the tartness

what's the word ?

I find a little apple squash concentrate works well for apple cider, and you can add to taste when you pour a bottle. I think people normally back sweeten with some non fermentable sweetener at bottling time

I sweeten mine with Splenda prior to bottling as it doesn't ferment further. usually put around 15 teaspoons in a gallon demijohn. Try different amounts in different bottle batches

Note mine always tastes fairly sharp at first - I have found the longer you leave it the less sharp it tastes. I leave mine around 6 months before it gets better and after a year its lost all the tartness, so plan ahead and be patient! Its worth the wait

I used a bottle from one batch to find out how much Splenda to use with the next. Kept adding and tasting until it wasn't too tart.

We preferred two level teaspoons of Splenda to a 500 ml bottle. So when I bottled I used two level teaspoons of Splenda and one of sugar for carbonation.

Haven't got any that are 6 months old yet Jaquiss :). I'm looking forward to when I do though.

aye that's right, looking to sweeten with a non fermentable really but might try aging it a little bit too
