Chill wort with ICE?

hi, is that ok to chill the wort with ice, instead of using wort chiller? I found some of the homebrewer just drop a big sanitized ice into the wort for fast chilling, seem like no problem at all...
 
Yup no problem. I used to boil 5L of water then put it in a 5L fermenter with cling film over the tip and leave to cool overnight then freeze.

Be aware that 5L isn't enough to get you to pitching temp for 23L. I also would freeze water in 500ml PET bottles santise them in starsan then dump em in the FV 5 at a time and stir a lot

If you get a big builders tub (B&Q £4) and put the FV in it with water and repeatedly change the water this make the whole process even faster.

Nowadays though I just no-chill in the FV

Glad to help. How are you brewing btw, as chucking Ice in your hot wort won't work for every brewing style because, as I'm sure you're aware, the ice will dilute your wort.

I maxi BIAB, so dilute a concentrated wort in the FV so instead of just using water I was killing two birds with one stone and using Ice. I understand extract brewers do something similar.

I take it you don't have a wort chiller? FYI you can no chill in the FV, basically leave it overnight to cool, which is what I do now. There are a couple of downsides and anti-infection precautions you have to take but as far as I'm concerned the pro's outweigh the cons.

Ya, I was thinking the same, instead of adding water, why not adding ice to dilute and chill, I was worry adding ice somehow will affect the wort, since you also using same method, i think i use it anyway.

You said can let the wort chill overnight to decrease the temperature, is that ok too? cause i thought they said need to rapidly decrease the temperature of the hot wort, is that really true or just a myth?

Leaving it overnight does work (although there are a couple of anti-infection precautions you need to take) but there is a down side to doing this - chill haze. As you point out, you need to chill rapidly to draw more proteins out of the wort, what's know as the 'cold break' If you don't, when you put your beer in the fridge it goes hazy although as the beer warms up the protiens disolve again.

For me chill haze isn't a problem as a) I don't chill my beer as I prefer it at room temp b) I mostly make dark beers so even if I did chill my beer I wouldn't see the chill haze.
