Im new to brewing wines however I have collected the following fruit:

*2.7kgof blackberries
*200g of elderberries
*600g of sloes

Has anyone got a a recipe that I can use these ingredients to make a few bottles of decent wine? I do fancy adding a few passion fruits to it for the citric acid and flavour, anyone see any reason not to add them?

Also is it worth buying a decent yeast like lalvin etc or will Wilkos wine yeast be fine?
I can also get more sloes and blackberries if necessary but I don't think I can get any more elderberries.
 
you could probably get a port wine from these - go to port recipe on this site - you will need to use a port yeast for this.

If you want a dry red I would cold soak and ferment for 5 days(all the -ingredients)
add 2 t'spoon citric acid,
around 2.5kgs sugar but better to use a hydrometer.
Wilko yeast is fine. there is one with nutrients added but if not add a couple of t'spoons of tomato puree.
I would also add 2 litres rjg - lidles is fine

After 5 days strain and rack into Demis until fermented out
I find Elderberry wine needs racking a few times and takes a while to ferment right out - if in doubt add ferment stopper before bottling


This is how I normally muddle along

Make to 2 gallons
