Hi my foraging freinds,

I decided to use water in my first elder and black wine, I found this recipe on the web.

Being inpatient I have defrosted my 21lb of fruit tonight with boling water and should
be following this recipe. PS. I have recently made a gallon of aldi fruit juice cider fermented with brambles.
The result was similar to dark fruit cider which you buy. Very nice.

“Elder and black” elderberry wine recipe
To make one gallon (4.5 litres)
1kg (2.2lb) elderberries
1kg (2.2 lb) blackberries
4.5L (8 pints) water
1.5kg (3.3lb) sugar
1tsp yeast nutrient
Juice of one lemon
1tsp pectolase
1 sachet red wine yeast (NB one sachet is enough for up to 5 gallons)

TBH I find it better to make a blackberry and Elderberry seperately and then mix them. It all depends on the berry's, sometimes Blackberry or elderflower wines are fine on their own in some years and others they are better mixed. This way I get to choose

It would be good to hear how others get on with blending wines and what good blends they have made as I bet there are some that mix together well unexpectedly

I've done a gooseberry and grapefruit blend - was not good at first but I'll check in 6 months or so to see if it's improved

This has given me an idea for a new thread :)

I have it brewing now all in together. I decided I had enough berries to make a 5gallon batch all together.
And the recipe I found suited that. I added a few changes to the recipe like adding 2 Wilko red grape juice concentrate 220g.
And added the sugar in stages up to 10lb so far waiting to see if the yeast consumes it all. I didn't want to end up with very sweet wine. Its still bubbling but quite slow now. Wont be long when I apply a fermentation stopper. I have been tasting it along the way at it tastes like it would be a nice wine after leaving it to mature. Even tho I used half and half berries I can taste the elder berry coming through more. With a strong tannin bite which I like in wine. I am going to be strong and allow this batch to mature for a year or so. Hopefully??? after all the work I have put in collecting and preparing it. Ok I might just try a bottle a month. Happy brewing
 
I made a similar brew a couple of years ago, one of my first attempts at anything. Pleasantly surprised and very drinkable.:thumb::thumb:
 
Hi all,

Thank you all for your interest in my Elder and bramble project.
My brew is bubbling once every one and a half minutes, I added another 1lb of sugar, after about two hours ago, there isn't any change in the air look. I think the yeast is about spent. I never took the original gravity, wish I did now.
So don't know the alcohol level. Dublin12 did you get your wine finished?. Maybe I should just leave it bubble away till it stops? and keep feeding it with sugar??
The taste is at the right sweetness level. I used a Gervin GV2 Robust wine etc. yeast rapid ferment etc...?? should be about ready now.
My next plan is to put a side a few bottles and make a quick fix port wine. I need to do some research on this site about this. I have read somewhere about adding brandy?. Happy times.
 
Mine is still on the go. Having found that normal yeast is not good enough in my previous WoWs I made no mistakes with this one - heaped in 5tsp of youngs super wine yeast compound and same of nutrient. It is still bubbling away quickly, has a lot of sugar to burn through.
