WOW - When to rack?

I'm a bit confused as to when I need to rack my WOW. I've got one (1 RGJ, 2 AJ 600g sugar, Youngs Super Wine Yeast Compound) on the go, and after 9 days at room temperature its still bubbling away - one every 6 secs or so. Its as cloudy as, well, a red cloud!

Do I wait until airlock activity has stopped, then rack, or what? Also, when do I add the finings, after racking or before? Ditto the stabilizer, when do I add that?
 
Its OK - I've found where this has been asked before, and the answer was;

Once fermentation has finished leave it for 7 days then rack into a sterile DJ onto a crushed campden tab, add stabiliser and finings if required, once clear you can age it in the DJ under airlock or bottle it.

I forgot to add if you don't want fizzy wine you need to degas, you can shake it and release the gas which i found hit and miss at best or you can make a wine degassing wand that fits into a cordless or corded drill which reduces the time to about a couple of minutes, video here -
 
After much experimenting in the early days members decided you do not need to leave 7 days after fermentation has finished and i haven't done this for ages so -

When you only see one bubble through the airlock every 2 minutes rack onto a crushed campden tablet, add stabiliser, degas then add your finings of choice.
 
To be honest these wines do not really benefit from ageing so once bottled enjoy it that's what we do.
