Ok so I have a day off, SWMBO is away until late therefore a brewday is on the cards.
In the cupboard I have the following:
Pale Malt 2.8kg
Carapils 150g
Pilsner 700g
Crystal 450g
Amber 450g

Cascade 26g
Simcoe 40g
Saaz 70g
Fuggles 110g
Golding 60g

I can run along to the not-too-far-away homebrew shop for more malt but would like to clear as much as psssible out of the cupboard.
Any suggestions welcome.

Fuggles and Saaz pairing, maybe cascade as bittering to make some sort of Belgian inspired American ale perhaps? I'm not sure how you would top up the pale ale and pilsner malts using the others though.
 
My suggestion would have been a 19th century K ale i.e. Strong and hoppy.

2.8 kg Pale Malt
700g Pilsner
3 kg Lager Malt

Mash @ 69c for 1.5 hours

Hop Additions...
26g Cascade @60
24g Simcoe @60
50g Fuggles @30
70g Saaz @15

I have quite a few K ale recipes, a lot of them include American and continental hops, as well as fuggles and/or goldings.
 
This is my recipe without trying to include what you had...

3 kg Maris Otter Malt
3 kg Lager Malt

Mash @ 69c for 1.5 hours

Hop Additions...
50g Cluster @ 60
50g Fuggles @ 30
50g Saaz @ 15
50g Hallertau Hersbrucker @ 15
1 Britewort Tablet @ 10

Ferment @ 18c for 14 days

Last time I used two packs of Girvin yeast, but any clean profile yeast will do. ABV should be around 6%...
