A bit of a flashback this one, 2nd to last bottle of my Citra/Cascade Summer Ale. Brewed back on 25 November 2017, this was my second proper attempt at BIAB AG, and fermented with CML Real Ale yeast. It finally became a delicious beer, but to this day that yeast doesn't want to stay in the bottle, and I end up tipping too much beer away because of it.. lol

It's absolutely delicious though, a proper cascade hoppy ale. Rather than the funky brew it was for many many months. lol

Me and the mrs enjoying a milk stout and a citra pale ale more than the rugby at the weekend. The pale has darkened quite a bit, although it seems much darker in this pic.

This was my first beer ever, Mr Beer - Bewitched. I started to drink this too soon and have now learnt that a bit longer in the bottle the better. In saying that though it was a nice beer that for sure improved with age. I will be doing it again. The head retention was not too good at all, but I hope to work on that in the next brews though.

Looks very nice. It looks quite a bit like the Coopers larger that I cracked open last night. It has been in the bottles 2 weeks 2 days now and is showing some good signs.

You got there in the end mate. What is the secret

I’m by no means an expert here and still a novice so others will add to this but for me :

Cleanliness is a given.
Don’t use soap in your bottles.
Hops make a big difference - heavy hopped beers are tougher to get a good head I’ve found.
I started using flaked oats.
Carapils malt adds more body and improved my head retention.
I’m sure there is other stuff I’ve done - but these were the ones that made a noticeable difference for me.

Lemon citra sour. Cost about 15p a bottle and easily comparable to sours I've paid £3 for
