My First Mead - Advice Please!!!

Hi all, I have a few demijohns spare and I've decided to give mead a go for the first time.
Because of the time of year I was thinking of a spiced mead (cinnamon, clove's, allspice ETC), that way it'll be good for Christmas.
Is this over ambitious for a first mead and should I make a plain mead for my first batch.

If a spiced mead is okay for a first batch does anyone have any good advice for a complete mead newbie?
I' planning on doing a minimum of 2 demijohns (gallon demijohns) but may do more if I can find a cheap supply of good honey...

Any advice will be greatly appreciated.

Just my thoughts, but if you’re going to do 2 DJs I would make them straight mead, and add spices later to one of them at first and see how they develop. Alternatively you can get more control over the spice flavour by using a tincture (basically soak the spices in vodka) and then you can measure out samples and figure what amount you like. But yes, the flavours sound good (think about adding some orange in as we’ll perhaps?) and you could definitely make a drinkable mead by Christmas if you start soon. Good luck!
