Has anyone got a tried and tested ginger beer recipe, found a few but would like to hear if anyone has a recipe recommendation.

I have just opened my first bottles of a Honey, Ginger and Peppercorn IPA which has turned out really good. not an actual ginger beer but has a great ginger flavour to it. I did make a few tweeks by reducing the ginger in the boil but increasing the ginger in the fermentation.

Just took a look and it does read well, I’m unsure now wether to make a purely ginger beer or a beer with ginger. There is a beer made with added ginger called Teacups, I’m not sure of the brewery that made it but it was very nice. Thanks for letting me view your recipe [emoji106]

Wish I could claim responsibility for the recipe but it’s one I found on brewersfriend. Just started brewing start of this year so still having to look up recipes to use and slightly modify. Hopefully start to understand the characteristics of the grains and hops soon so I can start coming up with my own.
 
It's very difficult to make a pure ginger beer without a ginger beer plant. It's a simbiotic culture of yeast and bacteria that you transfer from brew to brew like a kombucha mother.

They're quite difficult to get hold of unless you know someone who has one and are willing to share some.

Without it, your ginger beer just doesn't taste right.

And am very happy with the final results.

I did 2 step fermentation (1 week each) because i was worried about the fruit pith making it too bitter and the shear amount of ingredients floating about in it!
Its only been bottled a week and is ready to drink! I used dark brown sugar and a combination of orange lime and lemons and added some juniper berries!
 
In terms of the great back sweetening debate i used 11 sachets of stevia the type offered with coffee/tea in cafes/restaurants! 1 sachet per litre seemed like the right amount at the time and im happy with the results!

You can play and experiment . playing is fun.

True traditional ginger beer is made with a symbiotic culture of yeast and bacteria - probably mainly the yeast Saccharomyces florentinus (formerly Saccharomyces pyriformis) and the bacterium Lactobacillus hilgardii but maybe a few other minor variants thrown in as cultures like this tend to evolve & localise despite claims of purity .

However some people like the taste of ginger beer made with saccharomyces c. variations like brewers wine cide or bakers yeasts , using more usual brewing, wine/cider making methods

other make it with "water kefire"

or you can make ginger flavoured malt beer - or ginger wines ! Why not play and experiment a bit.

If going the more traditional way and you can't get a culture - why not try and grow a starter. (Ginger Beer plant) Dissolve some sugar in boiling water then cool it - feed daily or twice daily with grated ginger root (organic probably better for the starter as you want he natural yeast bacteria bloom on it ) and light sugar syrup (using clean vessels and covering with muslim. You'll probably find you grow a good culture - but if it isn't discard and try again.

Its a bit like making your own sour dough starter for breadmaking - you use the natural organisms then natural selection by discaring any off batches !

sarky git! Go drink some beer instead of taunting football fans in mourning. Or write a thesis on comparative religion . Or write a disgusted of Tunbridge Wells letter to the the Times about apostrophes or Oxford Commas ! Meanwhile I will practise my touch typing all night so I will never hit an m instead of an n . Or maybe not? Have a nice night scouring the internet for typos ; ) You know you want to. ;)
