No idea what this is going to be like to be honest but I go away and in order to maintain long term stocks I thought I would crack something in this heat.

It also doesn't help out fridge freezer broke the other day so space for ice bottles in the chest freezer wasn't on. Anyway needless to say I am going with the ambients on this one so it should suit.


Anyway

This is what I threw together

4.5kg pilsner
500grams wheat malt
250grams crystal

Was going to add a bit of rye but I thought I had some and didn't!

75mins Lemondrop hop 5.7% 25 grams
15 mins Lemondrop hop 5.7% 18 Grams
Hop Stand Lemondrop Hop 5.7% 25 Grams

May do a hop tea at bottling time or just see how it goes

Used Belle Saison.. If I wasn't going on Holiday and had so much to do I would have used a liquid but Belle is pretty good still for a dry.

Pitched at 26 degrees in my bath with cold water but after 48 hours let it naturally rise and with vigorous fermentation its taken it to 30 now in my office..

Sounds bonkers doesn't it? You'd be going crazy if it was any other brew.. I have never been this high before as I can add temp control normally but this should hopefully work really well.
 
My saison is sitting at 29c. Pitched (also Belle Saison) higher than I'd have liked to (27c), it'd have been preferable to pitch at low 20s but never mind. It'll still be beer and last taste was pretty good. Your recipe sounds tasty, haven't used those hops before. Would be keen to find out how it ends up.
 
Yeah, likewise pitched higher than would have liked but to be honest I dont think we need to worry, this is what the yeast does best. my ambient temp in the room is around 26 but the fermentation is pushing it towards 29-30.. the fermenter wall even feels warm..

Never tried lemon drop either but I guess Ill find out in a few weeks.. hoping for something citrusy and funky not really sure what ill get tbh.

What hops did you use?? noble?
 
Bottled this last weekend with a lemon drop tea, It was in the FV for over 3 weeks while I was in Egypt

I will try a bottle this weekend
