When I’ve used syrups/honey in previous brews I’ve just added it for the last few minutes of the boil.

It looks like quite a complex beer, it would probably have been better to brew it a couple of months ago so it would be properly conditioned for Christmas.

I have this in the fermenter ready.
I added the maple syrup at flame out.

I bought some cherry vodka from a polish shop to add at bottling

Just got done brewing this, added the maple syrup at flameout as suggested. Smelt great. My quickest brew day to date. 9am start and all done and cleaned up by half 12.

Oh god I made this two years ago and still have half my batch left. My homebrew shop didn’t have Northern Brewer hops so suggested I used Tettnanger instead (hardly matters as it’s hardly a hop led beer) but in my inexperience I didn’t compensate for the fact that it’s got half the AA rating, so it’s a sweet mess with no bitterness to compensate for it. I still crack one open every so often.

If you don’t make that rookie error then I’m sure it’ll be nice though! I’ll maybe make it again,

Might be a solution for you https://www.the-home-brew-shop.co.uk/acatalog/Isomerised-Hop-Extract-100ml.html, added with extreme care... lol
