Another brew done. I am on a roll.

This time a juicy hazy ipa.

4.5kg pale
1.2kg oats.
70g citra for a 30m whirlpool at 72c
35g simcoe as above
20g citra dry hop after 2 days
20g simcoe as above
150g citra dry after fermentation complete
100g simcoe as above
Yeast is imperial dry hop.
Water additions as per a neipa.

Fermenting at 20c as we speak. Ended up with 24l in the fermenter at 1.054 expecting to drop to 1.012. Had to through a couple of litres away because there wasn't room in the fv. So massively overshot my figures.

The second dry hop will be down after fermentation. I will take it off the yeast and dry hop at 3c.

Hoping to wash the yeast for future use. It went off like a rocket so blow off installed for this.
 
Racked off the ipa into secondary. Adding second dry hop at the same time. 100g simcoe leaf and 150g citra pellet.


I chucked in the pellets loose but decided the simcoe will go in a hop bag. Just about fitted them in. Then realised they wouldn't sink. Sanitised 3 heavy **** glasses and still not fully sunk, hopefully when the hops are all wet they will drop. Sitting at 3c now.

It dropped to 1.010 so perfect. Also giving yeast washing a go. Got 2l of wort sitting at room temp ready to separate

Swmbo asked for a bottle of my hazy ipa. Despite only being in the bottle a week I agreed. I reserve judgement until it's had a couple more week. It appears well carbed

With the weather forecast showing it would be dry and a nice 8c I thought I would get a brew on today.

Didn't really go to plan, I woke with the beginnings of a cold to find it was frosty out. I went to clean my kit before use but found that my hose pipe was frozen.

After some fiddling I finally got started. Surprisingly the water quickly got warm and in the end I overshot my 72c I was looking for so added more cold. Mashed at 67c and kept the temperature well. I decided against bringing the HLT out as I had used more water in the mash than usual so thought kettle and large pot on the hob would be ok. But time I added a bit of cold I had brought the temp too low. Next time I will just use the HLT.

The rest of the brew went well, wort chilled quickly and I just managed to get everything packed away as the cold rain came in.

Recipe - Mikkeller Milk Stout with a little tweek. Overshot my 70% efficiency slightly so attached recipe amended. Had 24l in the FV but threw away nearly 5l. Really need a bigger FV or a 5l one that I can ferment at the same time.

My milk stout is down to 1.028 after 14 days. Do you think it will be ok to bottle? Recipe said it would be 1.030 whilst beersmith said 1.025 Never had anything so high before but never used 1kg of lactose either
 
A couple of points off is close enough, if you ask me. But then, I'm an impatient so and so. So long as you're happy with the overall ABV, I'd always say rack it.

It should be done. Just never had anything finish so high. It will wait until Saturday as that's when I will get a chance to bottle
 
Ramp it up a couple of degrees until Saturday and assuming it’s the same gravity that’s a pretty good indicator that it’s done?
 
I'd bottle that given you're between both estimates. You can always lower the priming sugar quantity should over-carbonation be a concern.
 
Is it normal for the IBU's to be around 40 in a milk stout? I have an oatmeal stout in the FV and the calculated IBU is 21.77 (rager) or 18.47 (tinseth).
 
Sometimes the IBU's just don't make sense. I recently made the BrewDog Citra IPA and when I punched their numbers into Brewers Friend, the IBU's were way off what BrewDog quoted in their recipe. I suppose it could have been a typo but I deliberately added more bittering hops (Summit) at the start of the boil and the end product was not an overly bitter IPA.
 
FG hadn't moved so I bottled this evening.
I washed all my bottles before transferring to my bottling bucket. Hardly lost anything to trub lose so ended up needing to clean more bottles. I didn't the right then and poured myself a drink to use the bottle. Ended up with 47 bottles back in the fridge and most likely have filled at least another if I had bothered washing another bottle.
 
Should be ready for the February dark beers comp? Asking for a friend
