Hello, i'd like some advice on where to take samples from for readings? I have a tap on my boil kettle, but i seem to get different readings if I sample from the tap or off the top.

Is it as simple as just stirring the wort first?

How about if you want to sample from the fermenter? I doubt you can stir that and risk oxygenation?

Hello! Ok, I guess I'm talking about pre boil. I think I should just mix it up before the boil and then take a sample.

After the boil, it'll be in the fermenter and stirred for aeration, so i guess it should all be mixed enough for readings after fermentation.

Here's another question though...

During mashing, my temp in the middle of the grain is cooler than the temp around the edges of the mash tun, is that normal?
