I’m a corny newby so looking for some advice....

I’ve just legged a milk stout and guessing that I should aim for about 2 vols Co2.....

The keg is in the garage which is at about 5deg c.

According to the chart I’ve see that means I need to pressurise the keg to 7psi.

Is this correct? I’m aware that it will take a while to gas up, but how Long roughly??

Also, should I consider setting the psi higher for a period of time then reducing to 7 psi when the beers carved up a bit?
 
There are loads of charts that tell you the correct CO2 volume and psi depending on style. A good rule of thumb is approx. 2 vol and 10 psi.

As for carbing, I have always primed the kegged beer with a 1/2 cup of table sugar (dissolved in boiled water) as supposed to force carbing. At the end of the day, a keg is just a big bottle, so if you are happy to wait a couple of weeks for the sugar to do its business whilst the beer is conditioning, then you might as well save some gas.

At least that's the way I do it and it has been so far, so good.

Yeah that's about right.

There is no guarantee for how long it will take to carb your beer, but normally between 4-7 days in my experience.

As it sounds like you're not using a kegerator, you could roll or shake the keg a bit to speed things up. But, in all honesty, set and forget is the best method.
