Anyone got a reliable recipe for a Gose?

I’ve never brewed one and am interested to try....
 
I really enjoy goses, only brewed one previously and it didn't work out. It was my own recipe and I think I got very ambitious and failed. Anyway, I'm gonna try this recipe https://byo.com/article/gose/, also the article itself is interesting if you wanna know more. This guy made a video brewing the same recipe and reviews it here . It will probably be about 3-4 months before I can brew this, but I look forward to it already.
 
I'm planning on brewing this in the next week or two. Any suggestions on a substitute for the Santiam hops? I'd also like to add some fruit which I'll probably do at the bottling stage - anyone tried this? And finally, I didn't see any mention of pH in the recipe bit I assume it's quiet important. Anyone got any idea of where the pH should be at each stage?
