Went to the LHBS t'other day and instead of picking up the hops for the tried and tested Citra/Simcoe APA had a moment of recklessness and plumped for Galaxy and am planning a simple pale ale utilising these.

Now... do I use these for bittering, or leave the the full 100g for late additions/dry hop and get the full benefit of the fruit flavours? If I were to use another hop for bittering, which would be a good partner? Do 60 minute additions add much in the way of flavour or just simply bitterness? Also, as a single hop does galaxy offer enough or does it need a friend to make it really shine?

Oh so many questions....

I would use any other bittering or dual purpose hop you have for bittering and save all your Galaxy for late/dry hop. 60 minute additions add very little flavour if any but the 'type' of bitterness imparted can vary depending on the levels of certain oils within the hops - Chinook for example is known for imparting quite a harsh/biting bitterness which is desirable in an American IPA/pale ale but perhaps not so much in a English style or lager etc.

Galaxy is sometime referred to a 'cheater' hop because it works so brilliantly in everything on it's own. I don't brew many hoppy beers so perhaps others can advise but I know Galaxy and Mosiac are meant to work very nicely together.

The cohumulone levels in Galaxy means it will be VERY harsh if you use it anywhere on the hot side to any significant level. So you are right, just do a MASSIVE dry hop with it instead.

Thanks for the tips chaps, gonna try and brew this up at the weekend. Think I'll use magnum (if I've any left.. bugger, another trip to the LHBS) for bittering and then use all the galaxy at 15, 0 and dry hop. I'll put some numbers into brewers friend and see what comes out the other end with regards IBUs and how much of what when.

I did an all galaxy version of Greg Hughes' Spring Beer, and yeah, very harsh bitterness. My wife and father-in-law enjoyed it as more of an IPA but it was only 37 IBUs I think and tasted more like 50+. Flavour from late additions was good though, never dry hopped so can't advise on that.
