Hi, not quite sure what I was thinking, but I have massively overdosed my batch of red grape wine with 1.8kg of sugar per gallon! (5 gallon batch). My immediate action when the hydrometer went off the scale, was to chuck in a gallon of water. Is my batch redeemable?

Yeah, pretty much as you suggest, it will need to be diluted. You'll probably need to split it into two batches unless you've got a massive fermenter. You'll probably want to add more grape juice as well as water otherwise it will lose it's body / flavour. Need to double up on yeast etc. too.

Whilst designed for beer I often found this calculator good for wine too, just put the sugar content of the juice + the Tate and Lyle quantity your adding in the DME entry and then set the volume e.g. 22.5L (don't use US gallons, they're not the same as Imperial) and it will give you a rough estimate of the gravity https://www.brewersfriend.com/extract-ogfg/

I initially used 10 cartons of juice. I have now split the batch into 2 and added a further 2 cartons to each half and topped up with water. I am hoping this works although it could be a tad light on body.
