I got a Wherry kit for Christmas, I watched a couple of YouTube vids and noticed on the 2 can kits they only use I pack of included yeast but mine came with 2. I made the brew last night only using 1 packet, bit I am now thinking I should of used both can i add the second now or just leave it.

Welcome Luke, if you look at the wherry review thread nelow yours you will see that the wherry kits have 2 packs of yeast because if you pitch one the ferment is prone to sticking. I'd suggest you pitch the second pack.
 
Don’t worry - you won’t have done any harm at all. If it’s not bubbling away already, it will be very soon.
 
I have had it now brewing for 6 days and the reading I have got from the hydrometer is 1.012. if this is consistent over the next couple of dayswould this be ok to start bottling or putting in a keg? There is a lot of sediment still on the surface though, should I wait for this to go.

As you said, best to get a couple of stable readings before you bottle. So if it's 1.012 in a few days then you should be good to go. Ignore the surface crud, just syphon from below the surface and try to avoid getting too much in your keg or bottling bucket.
 
Cheers for the advice, I plan to siphon it into another bucket add the sugar and then fill a bottle and keg the rest.
 
Hi Luke, don't mean to be pedantic here but you would be better adding the sugar to the secondary (other bucket) and then syphoning the Wherry into the bucket letting it create a whirlpool type effect, that will ensure that the sugar will mix evenly in your brew. It doesn't do it any good to be stirred vigorously at this stage as adding too much oxygen isn't good.
