How does it work? I gather a new hole has to be drilled into the lid. Then there's the question of sealing it. Any ideas?
 
As MmmBeer says a bit of bubble wrap or a sponge held in place with some tape will do the job, this method is used by a lot of members here.

I drilled holes in my (plastic) fermenter lids and pass the probe from my inkbird in through a cable gland, which tightens up to make a good seal. Works for me (I'm sure all the other methods work too).
