I wondered what it would taste like if you fortified a wine or beer with Everclear or other Grain Neutral Spirit? I don't mean a big change in ABV, just a couple of percent.

Unbalanced?
Bit of maths, suppose you have a pint of ale, at 5%. Meaning you have 25 ml of alcohol. Add 25 ml of everclear and you have a pint of ale at 10%. (a bit less because the volume ups a bit with the addition of the everclear). You could try it with a pint of 0% beer, just add 25 ml ethanol and see if it tastes like proper beer.
 
I'm also interested if anyone has tried a few drops of glycerol/glycerine to improve mouth feel?

But people add such weird things to 'beer'! My Italian friends make limoncello with no brewing or distillation - they just add sugar and lemons to Everclear. But I agree that it would be cheating. I'm going to try adding pure ethanol just to see if it improves a homebrew or ruins it!

Having read the comments below your post above i can see its not something beer brewers add but wine makers do for the reason you mentioned.
 
Someone suggested I post this poll. Multiple selections are possible. If you have tried these adjuncts please post an explanation.
 
I've added glycerine to wines I've made from various things for mouthfeel. Some of the flavour packs with wine kits really overdo the glycerine and it makes it horrible if you add the lot. I haven't bothered with it since the first few tests and now just use the glycerine I bought for freezing yeasts.
 
I bought a one-litre bottle of grain alcohol (not denatured) on eBay. It smells OK. Will advise when I have added some to anything. But all my homebrews are already alcoholic enough for me.
