I'm starting to plan my fermentation freezer build, and have a question regarding the temp control. I'm planning on buying an STC1000 and wiring the freezer and the heater directly into it, but where is the best place to put the temp probe? I see that some people just let it hang inside the chamber, or tape it to the wall whilst others tape the probe against the FV and cover with bubble wrap or foam. Is there much difference and if so, which gives the more accurate reading?
 
Being it's the temperature of the wort you want to measure your best bet is to get it as close as you can to it while still being sanitary. For most of us that's strapped to the side of the fermenter. I hold mine on with a thick slab of blu-tak, some tape it on then tape a wadge of bubble wrap or a sponge over it.

If you were brewing a few beers and wanted to brew them at the same temperature but one wasn't going in for a few days you'd be better off moving the probe to the new fermenter when it went in because the fermentation produces heat, and more at the beginning when it really lets rip.
 
I bought a short length of stainless steel tubing and blocked off one end with JB Weld. Pushed it through a hole in a rubber bung, and I can drop the sensor down inside. Seems to work well, but I guess it depends on the size of your sensor.

Where did you get the tube from? I couldn't find any longer than 30cm. I have used one before with one of the long inkbird probes and works really well. Though the readings were the same when i taped the sensor onto the side so i do that now for simplicity sake.
