Guys

Brewing belgian clone today, cooled wort to 25 degrees, using wyeast belgian ardennes 3522, would those be OK to add now? Or is to to warm. Packet says 21 degrees.

Thanks

Hi you need to get the temp down a little more as when you add the yeast it will probably lift the temp a couple of more degrees when it kicks off. At a push you would be alright but put the FV in a cooler place if possible to get the temp down in the first few hours while the yeast is not at full throttle

Cold wet towels on the FV will help to get the temp down or stand the FV in a barrel of cold water, some use those rubber/plastic laundry tubs the ones that are usually bright colours. If you have no place cool enough consider using the tubs and change the water each day to help keep the temp down

Jamil Zainisheff always says pitch a few degrees cooler if you can but not higher because yeast don't like temperature drops and it can make them flocc out early. I'm wondering if that's what happened with a spate of s-04 stalls I had.

I love the flavour profile of this yeast, a little cleaner than some Belgians but very versatile. I agree with the above though, if you can get the temp down a couple of degrees before pitching it'd probably be better.

Belgian Ardennes is very versatile as Strange Steve says, I brew all sorts with it. I normally pitch @ around 18-19c and set the temp of my brew cupboard to 19c, fermentation will add a few degrees to that. Lucky for me, my brew house rarely exceeds 18c in the summer, its around 14c today.

Now around 20 outside, most of the house 23 after whole day of sun. Found cool space in one bathroom. 18 on floor tiles, 21 air. Wort in fermenter already dropped to 23. Will give it another our , to drop to at least 22.

This supposed to be Brugse Zot blonde clone. Hopefully it will come out nicely. Borrowed from a friend all in one system (something like robobrew) to see if I like it. Saved me around 2h in comparison to my cool box mash tun and bucket kettle. Did 2 brews today, above and Summer Lighting clone.
Wife seen me brewing and asked if I would like one for my birthdays in August. Well, as you are offering.... :)

Oops forgot to update you guys. This beer came out great, but it really reached in't potential after around 4 weeks in the shed (around 15 degrees). Lovely colour (bit darker than Zot I was trying to clone), great taste, slight floral, orange (from the peel), other fruits (I think) - really complex but great taste. Will do it at some point again.
