Ive just sampled my cerveza which was a Christmas gift and am well pleased with the result.
Brewed short to 21 ltrs with 500g light dme and 275g brewing sugar.I swtched the yeast for wilko 11g gervin english ale yeast, og 1035,pitched@20'c, fermented 20/22'c,dry hopped after 14 days with 50g cascade leaf hops (sg1006).Bubbling in airlock restarted and carried on for 11days, more or less stopped,(fg 1003) so decided to bottle with 136g sugar batch prime, carbonated for 2 weeks,put one in the fridge and just tried it... lovely hop aroma, hop taste nice fizz but not too much, its made a great hoppy pale ale rather than a cerveza,which is what I was trying to achieve and it tastes really good.Really chuffed!
 
im making this kit tomorrow and like you will be using light DME and maybe some beer enhancer - but I am aiming for a Cerveza that I can drink icy cold in the garden
 
Wilco Cerveza is my "Go To" brew for anything that I want to experiment with or for a summer session.

The last one was started on 18th February and for the extra fermentables I used 950g of Tate & Lyle Golden Syrup and 450g of Honey.

I used the yeast that came with the kit for a week at 19*C and then, on 25th February, dropped the temperature down to 10*C, added a Lager Yeast and left it until 14th May before transferring it.

Half of the brew is still carbonating in a warm fridge, but I've had a few litres out of the Growler carbonated with CO2 and it's so delicious that the whole lot will probably be gone by the middle of June!

PS I don't like any "ice cold" brew. It's my considered opinion that the only reason the big companies serve drinks so cold is to numb the drinkers taste-buds so much that they don't notice how **** the brew is!

I have one of these in the fv at the mo, I used 500g light dme, 500g light dem sugar, and 300g of ordinary white sugar, I had a spare packet of wilko yeast so bunged that in as well. pitched at 20c, will post results when finished
 
I transferred to my Cornelius keg yesterday, it had settled beautifully clear in the FV with a nice solid sediment that didn't get disturbed when I transferred. I currently have 10-15 psi of c02 sat on it and I am trying to promise myself to leave it untouched for at least 2 more weeks - however I am sure I will break that rule under the guise of quality control at some point. In the end I used 100% beer enhancer, saving the light DME for something else
 
Yes if its finished go ahead with the hops. Not used equinox hops so I have no idea how they will impact your beer. Some hops give a big hit at low weight additions others don't. My rule of thumb is to start at 25g if its an unknown hop to me. But if you are a hophead like some on here that may not be enough so 50g or even more might be in order. You won't really know until you have done it. And nowadays if I add hops late on in the primary I make up a hop tea leave it to steep then when cool chuck the lot in so its the equivalent of a 'wet hop'. That way I hope to get the most out of the hop addition for both flavour and aroma.
 
Hi Terry thanks for the reply, I do like hoppy ale like Wychwood ipa and hob gob gold, this is for barby days more for the younger end so to speak, just thought it might had a bit of citras flavour
