I've lined up a shameless Erdinger clone for the weekend.

Fermentables
2kg Weyermann Pale Wheat Malt
1.8kg Weyermann Pale Ale Malt
0.26kg Weyermann Munich Malt

Mash vol 14.5L
20mins 50C
60mins 66C
10mins 75C

Sparge vol 12.75L

Boil 60mins
Single hop addition, Hallertauer Mittlefrau 25g at 60 mins

Target water profile, Ca 50ppm, HCO 25ppm

Fermentation
Mangrove Jacks Bavarian Wheat M20, 1 sachet.

I've added a protein rest in the hope the lautering will be easier and head retention will improve.
Will be making a stab at efficiency calculations and checking mash pH this time, in the past I've been hitting numbers so haven't really given it much thought.
All thoughts and comments will be gratefully received.
 
Fit a blow off tube!
+1 - or use an FV with plenty of headspace!

Looks lovely. Don't know the yeast, I use the Fermentis Belgian, but the malt bill looks spot on and the hops too. Good luck.
 
True. I was just saying I didn't know the yeast. Wasn't suggesting he change it. Should probably change mine, to be fair, seeing as it was Erdinger that inspired me in the first place many years ago.
I used MJ M20 for my only Hefeweizen and it turned out very nice. I’d maybe try a liquid yeast if I did it again just to see what the difference is but I liked the MJ one a lot
 
Yeah the MJ bavarian yeast makes a good stab at it IMO - they also do a belgian wit which is for hoegaarden lovers athumb..

erdinger have the og & fg numbers on their bottle so that helps. Plus you could get a packet of muntons dried wheat extract to be added if the numbers aren't there?
 
@Alastair70 looks great. I did 2 batches so far. Same as you 19l in 30L fermenter, didn't need blow off tube. Used wyeast 3068 on both occasions and worked great. Great beer for the summer and really quick to make.
