No honestly, i am :D

Just been messaged by my mate who has just started mashing for a batch of saison.

He's just realised he didn't buy any yeast and the LHBS is shut on a Sunday.

I've suggested he carries on and boils the wort to sterilise it and then leave it in the kettle overnight until he can get yeast tomorrow. Once he has the yeast he can transfer to FV as normal, get the yeast in and start fermenting.

Or, he can add some lacto and start a kettle sour instead of a saison.

What would you do?

Could either bring the wort to the the boil then leave it till tomorrow- start the boil again and then add his hop additions or do everything as normal, transfer to sterile FV and pitch yeast when he gets it. Depends how much the infection risk worries him. Either way should work:beer1:

Some brewers don't chill their wort, but leave it to cool overnight. Your mate wouldn't be doing anything different to that. There should be no problem so long as he leaves the lid on the boiler and doesn't start poking around in there. Can he get the yeast tomorrow morning? The sooner the better, but saison yeast is far from delicate in my experience. It should be just fine.

Cheers folks - in the end he found a dusty packet of US05 at the back of a drawer so it’s now being referred to as a pale ale rather than a saison. athumb..

He can still stick a saison yeast in. The two will work together and the saison will probably continue after the SO-5 has finished its work. Could be very nice actually!
 
Both of those options were towards the top of my list.

I think if it were me, I’d be collecting whatever preferred saison yeast this morning and getting in there ASAP alongside the uso5.
