Just finished 2 gallons of red grape juice at 10% abv-finished at 0.998. Now in a 10 ltr plastic dispensing [bag in box ] Its about 8 weeks old and is starting to have quite a nice flavour. Think it will need a few more months yet. I have 5 ltrs of Waitrose merlot grape juice in the fridge - when I finish the pergola I will probably do that next. OR I may do another 10 lt batch of Tea wine..I get quite a few requests for this, seems to go down well and it matures pretty fast [ another bonus ]

Is the tea wine a standard CJJ Berry recipe?

Not really....on something so basic I tend to " do my own thing " so to speak especially if it works ,I often elaborate a bit next time..
BUT its always documented. [ So - if I screw up I know what not to do next time.]wink...wink...

Done as follows
1 Lb raisins..chopped and boiled for 30 mins
17 T bags / Yorkshire Tea + 4 mint T bags
Juice of one orange
2 tsp lemon juice
Pectolayse / Bentonite
10 ltrs water
4Lb sugar..........SG 1.07

+ 14 days Finished at 0.995
Stabilised + Bentonite+ Campden tablets
Fined using Kwik Clear +sweetener
Started Sept 2019.......Currently going down like nectar.acheers.

I admit it may sound a bit OTT - but as the saying goes - it works for me-and my friends.
