It can be steeped. You are going to struggle to get anywhere bear that final gravity with beer yeast. Also the bitterness is extremely low for such a big beer.
Well I can still pop into my local homebrew shop, so would you suggest any other type of yeast? And what would you suggest in regards to the bitterness?
 
For that sort of ABV and volume, I really wouldn't know. It's not something I've had the inclination to do. Get a high alpha hop and aim to get those IBUs up towards the 80s otherwise you are going to end up with a sweet, cloying beer. I'd honestly consider dropping some of that extract to get you to closer to 10-12% and just use 3 packets of a good alcohol tolerant ale yeast. Mangrove Jack's M42 would be a good shout.

I really want a sweet, dessert type stout. I'm still toying with the idea of dropping the lactose. On that, I may leave the bitterness as it is. Personal preference and tastes I guess. I think I'll stop by my LHBC tomorrow and grab a yeast that will give this a go, I'm adamant on making a stout that will put me on the floor... For scientific reasons of course.
 
@BeerCat I made a mistake and ordered Chocolate Malt instead of Roasted Barely, f**k knows why. Can this still be steeped in 1l of cold water overnight, rinse with 0.5l of cold water the next day and boil for 5 mins to sterilize just like the barely method?
Yes that is fine. If your still thinking of lactose you can add it when bottling. I like this method as I can have bottles with and without.

Yeah I'm still unsure on the lactose, I'm just keen for super sweet and a thick body.

So, the yeast is kicking the s**t out of the beer! So much so that in a 30L FV with a 19L batch, the head is pushing the lid off and causing a bit of a mess. Is there a way to reduce this? Fix it etc? As it's only been 24 hours @Brew_DD2 @BeerCat
 
You could put on a blow off tube into a jug. You're probably going to lose a fair bit of yeast/beer, but it's better than the mess.
 
Well luckily at the moment, the towel that is wrapped around the FV is absorbing the small amount of head that is pushing its way out. But I'm not sure what to expect next. The Bung is filled with head as well asad1

Tell me about it! It's bubbling nicely now with the blowoff tube I managed to rig together lol. But the mess prior to that looks dreadful!
 
The OG by the way, was a lot higher than expected. OG: 1.210.

I seem to remember others expecting something along those lines athumb..

Seriously though, if you get that to ferment down to anything remotely respectable gravity-wise, it's going to be over 25%.

I have no idea what yeast, if any, you could use to ferment that out.

How did you get your SG out of curiosity? I don't think my hydrometer goes close to that high!

I've no idea what to expect with the FG. But the yeasts are doing their job... So far. My hydrometer goes to 1.220.
