I am a recently retired former pro brewer getting back into homebrewing.
Years ago I had a single tier, three vessel, propane fired system.

I have recently ordered a 65L BrewZilla with 35L DigiBoil for sparge water.

Looking forward for the next phase.

Wise move. When people ask me why I don't sell the stuff, my stock reply (among others) is "Why make a job of work out of something you enjoy?" What are you planning on brewing?

I am planning on brewing a basic pale ale with Rahr 2 row standard and Weyerman Carahell. Hopping with Columbus and Amarillo. I will be brewing that 3-4 times to sort out what gap I should set my mill to get the best compromise between lauter run off and brewing efficiency.

That depends on what you are looking for.
Back in the '90's, I made an IPA that won 3) Gold medals at the Great American Beer Festival in 4 years.
It is a bit out of date, but very good tasting! I had a chance to brew it again last year.

Recipe Type:All Grain
Yeast:1187 Ringwood
Batch Size (Gallons):5
Original Gravity:1.060
Final Gravity:1.018
Boiling Time (Minutes):90
IBU:63
Color:10.7
Primary Fermentation (# of Days & Temp):7 days @ 20C
Secondary Fermentation (# of Days & Temp):21 days @ 4C
Vail Pale Ale

11 lbs. American 2-row malted barley
1 lb. 60L crystal malt
1 oz. Centennial hop pellets (90 min)
1 oz. Centennial hop pellets (30 min)
1 oz. Cascade hop pellets (10 min)
1 oz. Cascade hop pellets (1 min)
1 oz. Cascade hop flowers (3 weeks in secondary)

Mash grains at 158 F for 90 minutes

For extract, sub 7 lbs. Light dry malt extract for 2-row

GOLD Medal Winner 1992, 1994, 1995 GABF India Pale Ale
