Hi,

Just wanted to know what people think about following kit instructions and adding finings and other additives like sulfites etc or will I get a better end product by letting it clear naturally?

I cannot remember any member posting that they bought a kit then decided not to use the stabiliser and finings.
 
Personally i would happily use everything bar the sulpite as i am very sensitve to it but thats just me.
I do use sulphite for sanitising all my eqipment and it neutralises hypochlorite (bleach/milton which you dont want the taste of in your wine.)
 
Let it clear naturally if you're sensitive to sulphates, it'll just take longer to clear.
 
You don't need them but they do make it easier or faster.
Personally, I don't use any clearing agents and prefer to use the refrigerator and time instead.
Using them depends on how important having see-through beer is to a person in a shorter time.
