Hi all

I am thinking about my 3rd go at BIAB; and was thinking about doing a late hopped citra / galaxy combo IPA, the recipe idea was kindly suggested by @matt76 , his hop bursted "Podium Ipa". My original recipe idea is here:

I was intending to use Galaxy along with Citra as the hop combo as a) I love citra and b) I had some Galaxy hops still foil packed. However, I now think as the Galaxy were bought in 2017 and have not been cold stored; they may have lost some or all of their punch and I probably should swop them for something else to avoid disappointment. Suggested galaxy substitutes I have seen are Simcoe, Amarillo, or Centennial. I'm a big fan of tropical / fruit bomb IPA's so was also thinking maybe Cascade might also work- I have only had Amarillo in an extract SMaSH which was okay; and only had Simcoe in commercial brews, so unsure where to go with this.

Any advice on suitable hop to go along with the Citra would be welcome; and if the quantities I am planning would need a re-think or if I could just do straight swops.

I have seen and used Vic Secret (tropical fruit, herbs and pine with clean notes of pineapple and passionfruit) as a substitute for Galaxy. I've used Idaho 7 recently which has notes of orange, tangerine, black tea, and pine. A quick scan of the web shows that quite a popular recommendation is Mosaic, Citra and Simcoe, in quantaties 2:1:2

Thank you for that- I will probably be using Crossmyloof for ingredients and they stock Vic Secret, but I already know I like Mosaic, so that might be good...
 
Vic Secret and Ella are good shouts. I'd heartily recommend either. Idaho 7 is a magnificent hop and would work really well, but is quite different from Galaxy.
 
After some thought I think I'll go with a citra / cascade hop combo; but apparently citra may overpower, so I have gone for a 2:1 ratio in favour of more cascade. Does this look okay to people?

I get my ingredients from CML and Maltmiller. I bought some leaf Vic secret for a smash I have in the FV now. Cascade/centennial/citra at 2:1:1 works well so I think you’re measure should be fine.
 
Thanks both for repilies, Vic Secret does sound very interesting. I am going to try a few hop combo ipa's over next few brews I think so will keep that hop in mind for them, do a few combos and see which I like best.
