Took a bit longer than planned to get round to this one. In the meantime I've polished off all stocks of both wheat beers and the last ale I brewed. So plenty of empty bottles waiting to be refilled.
Had a very pleasant days brewing on Friday, didn't chill post boil then pitched my yeast yesterday evening. Its showing gentle signs of fermentation this morning with a good Krausen forming on top of the fermenter.

Batch Size
23 L. Water profile Ca 100ppm, HCO 90

Fermentables
Pale ale malt 4kg
Malted Naked Oats 400g
Flaked Barley 300g
Carafa Special III 240g
Cararoma 170g

Mash - 18L
60 minutes 67C
10 minutes 75C

Sparge -16L

Boil - 60 mins
40g Challenger pellets - 60 mins
20g East Kent Goldings - 15 mins

Yeast
Fermentis Safale S-04

Original Gravity came in spot on at 1.050. Had a swig from the trial jar, chocolaty maltiness first, then the oats come in before a very bitter finish. Hopefully fermentation and conditioning will take care of that.
 
3 weeks in primary, gravity down to 1.014 giving an ABV of 4.7%. Bottling was delayed awaiting completion of a brew fridge. I've now got 40-odd bottles tucked in for the next fortnight at 20C to condition.
Swig from trial jar was perfect; clean taste, great mouth feel and the late astringency present on brew day has completely gone.

Now planning what to get into a fermenter to go into the fridge when this batch has conditioned.
 
This is my first attempt a stout so no additions this time round. Hoping for a dryish finish that'll carry the other flavours well.
The plan will then be to re-run the same recipe, but add 1/2 a dried habanero with the 15min hop addition, and then another 1/2 dried habanero and 20g of cocca nibs as a dry "spice" 2 days before bottling.
Next brew is going be another 'Drunkle Stephen' with rice hulls this time.
 
Two weeks in the beer fridge at 20C and just started cold conditioning a couple of days ago. But couldn't wait, so cracked one tonight (it's been a long week).
Taste is spot on, head stability not there yet but fingers crossed another 2 weeks and it'll come good. Thats the New Year's Eve party covered!
