I have;
7lbs of LME (the suma stuff)
500g Extra dark spray malt
50g nugget, 50g Saaz, 50g chinook and 50g cascade hop pellets.

I was thinking.
1) Boil some of the malt with the hops for 60min. (in 10-15l of water if I can get a big enough pot)
Start 10g of each, middle 10g of each, end 10g of each.
2)top up to 20L mix in the spray malt
3)Ferment and then dry hop all the rest (20g of each) for 4/5 days at the end of the fermentation.

I don't want to add extra sugar as I would like a sub 5%. (all the beers and ciders I have been making are 6.5-7.2 and I cannot enjoy more than 3 at a time).

What do you think? Have I got the right idea. I have no Irish moss so I was going to put it through a sieve into the fermenter.
 
It all depends on what type of beer you like.

The hops you listed could make a nice US style pale, but leave the Saaz out, that's more of a lager hop. I would suggest using the Nugget for bittering, then the Cascade & Chinook for middle and late additions and dry hopping. Don't worry about the Irish Moss too much, but DON'T sieve it, especially if you chill it in the pot as this is likely to introduce infection.

My best piece of advice is to run the recipe through some brewing software to get the ABV, IBU's & colour in the correct ball park.
 
So do I add 50g of the nugget from the start? looking at calculator

I changed it to
50g nugget for 60min
20g chinook and 20g cascade 30min
20g saaz 10min

dry hop 5 days 30g of each chinook, saaz and cascade.

IBU's came up to 127.75
 
Definitely don't add all your lme/ spray malt in to the start of the boil if your not boiling the total batch size or more( if your including for boil off). I made this mistake once and it was extremely sugary like how a fizzy drink is first thing in the morning. High gravities in the boil affects the hop utilisation so add half at the start and half at the end. Good luck with itathumb..
 
I think it looks pretty good. I'd totally drink it. As mentioned, you can move the hops around or even switch one. You're going to be impressed either way.

Personally, I don't see a problem pouring the cooled wort through a strainer or sieve into the fermenter if the strainer is clean and sanitized. I do it all the time. The hop matter removed by doing this will be a significant amount. So to get your preferred FG, go short on the top-off water at first and check with your hydrometer. Also, stir the wort well when adding water to get an accurate reading.
Note: I haven't noticed any difference in clarity by straining the wort. Without advanced techniques, when the beer is carbonated, refrigeration will, over time, do a very decent job.
I would also add the spray malt at the end of boiling, cool wort, strain into fermenter, top up with water carefully.

I pass mine through a strainer, too, when I do a stove top brew. It also helps oxygenate the wort as it passes through lots of little holes instead of simply pouring into the FV.
 
I did it! Opened a bottle (or two or three) tonight!

I did this in the end.
New IPA 1.050
500g dry dark malt
3.18kg suma malt

15l boil 1 cup black treacle and golden syrup.
60min 50g nugget
30min 15g cascade and Chinook
10min 10g cascade Chinook and 10g Saaz

5day dry hop 25g cascade and Chinook
Final 1.016.-1.018

It tastes bitter\sweet\honey\malt. Not too strong. It tastes familiar. But cannot pin what it tastes like.
