Hello,

I am hoping to get some advice for my next extract recipe. I am planning on doing one of the single hop ales in the revised Greg Hughes Home Brew Beer book (page108). The grain recipe calls for 4.7kg of pale malt and 235g of carapils malt but the extract recipe states 300g carapils and 3.3kg of wheat malt extract. This doesn’t seem to be consistent with his other recipes and feel this would produce a much different beer (in my novice opinion). Comparing it to his other recipes with an extract version, would I be correct in thinking it should be 235g carapils malt and 3kg of light DME to give a similar style?

As I say I am still very much a novice, with this being my second non-kit Brew, and I welcome all advice.

Thank you.

That does sound odd, you'd only use wheat malt extract in a wheat beer.

Yes go for light DME and Carapils. Carapils is just like a crystal malt so can be steeped for 30mins rather than mashed, strain the liquid then do the boil with half the DME, adding the rest at the end.

I don't have access to the recipe you have quoted, but it sounds like an error. The two single hop beers I have access to in the GH book (EKG and Cascade) both use 235g Carapils and 4.7 kg Pale malt with an extract equivalent 235g Carapils and 3 kg light DME. In both cases the target ABV is 5%. However there is an American Wheat Beer in the book which uses 3kg Wheat Malt, 2.5kg lager malt and 300g Carapils, with an extract equivalent of 3.3kg wheat DME and 300g Carapils , but the ABV is 5.9%.
If your proposed beer is 5% use 235g Carapils and 3 kg light LME.

Thanks guys, really appreciate the responses. Feel more confident now and will go with 235g carapils and 3kg of light DME. Just got to decide which hop to use, they all sound good.
acheers.

I obviously don't know where you are buying your DME but it can be expensive. I buy mine from The Homebrew Company but have to buy £70 of stuff to qualify for free p&p , but there is a small HBF discount. Their DME is £14 for 3kg which unless you buy bulk is just about as cheap as you can get. In comparison if I was buying 3 kg DME from Wilko it would cost £27.

I second this. I always buy in bulk for my next three or so brews (to qualify for free delivery) and the £14 for 3 kilos of DME is a great deal.
Even better is that they sometimes send them in 1kg bags.

That does sound good. I recently bought 10kg of DME for £58 with free postage from brewtobottle.co.uk. They are worth checking out if you are only buying 3 or 4kg. Think their postage is only £2.

As for the OP, you can add the DME at any stage but it will have an effect on your IBU's. Use a brewing tool to calculate this (Brewers Friend). Adding the DME towards the end will mean you don't have to use as many first wort bittering hops.

And FWIW, I think the wheat DME sounds like a typo. I would go with light DME.

While wheat dme wouldn't be my first choice for non-wheat beer if I was wanting to brew and that's all I had I'd use it.

Thanks for the advice on well priced DME Terrym. I will take a look and maybe plan my next 2 brews to get the value up for free delivery.

BTW, I just went on the Homebrew Company website and looks like everything is 10% off.

Eeek £70 for free delivery.??

If i were in the homebrew buisiness i would be watching forums such as this like a hawk,
And getting the buisiness in.

90 quid for 25kg of DME? Yes please. I shall be buying this next. Hopefully along with a used corny for my kbs project.

I had a look in a copy of the original version of the book, that my local Homebrew shop holds, and in there the recipe is 235g carapils and 3kg of light DME so it is an error in the new edition of the book.
