Hi from Bristol,
I've joined up as I'm going to start making wine. My husband brews his own beer from kits, so I thought I might as well use the equipment to make my own wine.
I'm planning to start this weekend with a Beaverdale Nebbiolo kit (I received a recommendation for this). Once that's fully fermented I thought I'd bulk age it in a carboy for a few months, then start a Beaverdale Gewurtztraminer that should be ready to drink a bit more quickly. After that I might experiment with a few country wines. Now I just have to think where on earth I'm going to store all these wines! If only English houses had cellars..
I'm sure I'll have plenty of questions as I go.

I haven't made any of these kits but am surprised they need ageing for several months, there are quite a few 7 day kits out there that are drinkable when new Winebuddy being one we have made.
 
I don’t think you need to age them, but from what I’ve read even a couple of months ageing will result in better flavour.
Plus a bit of time bulk ageing gives me time to collect plenty more wine bottles for when I’m ready to bottle!
I’m very pleased to see that a wine box we bought on holiday has a reusable bag, so that will be getting used again!
