Hi I am new to brewing only done 1 all grain using the punk ipa kit. However this went rather well if I do say so myself so decided to try the following.

https://brewstore.files.wordpress.com/2016/11/joker-clone-williams-brothers.pdf

but only making small 4 litre batches, down scaled accordingly

the store didnt have citra or first gold hops, but gave me alternatives am I good to go the same quantities and additon times

Willamette hops USA 2018 5.3% Pellets = first gold sub i think

Ekuanot™ hops USA 2017 14% Pellets = citra sub

any input on this would be a great help

thanks

Tom

I would suggest that you compare the alpha acid percentage of the recipe hops to the ones you have and adjust the amounts accordingly to give the same balance. Alternatively you could input the recipe into a calculator like brewers friend, take a note of the ibus etc, then change it to your hops and adjust the amounts to match the original. This wouldn't take into account the difference in flavours of the hops but would give an approximation and ensure that the bitterness is correct.

Thanks for that.I went with calculator method trying to get similar ibu. Being new to brewing I was a bit worried the flavours wouldn’t work. But guessing trial and error is the only real way to do it . I’ll know in 4 or 5 weeks

The thing is unless it's off it'll be fine. I've not made a brew I couldn't drink...except for the last few Cali common from two years ago that now taste like a sherry paraffin cocktail!

Hop replacements are good choices, and reminder: you don't need IBU recalculations for the late (0 minute) hops, just use the downscaled grams.

Hi Spider, a lot of people talk of green peppers with Ekuanot, I have used them a few times for dry hopping and never got the taste of green peppers also they are a high alpha acid hop good at flame out acheers.

Even though your recipe states n/a ibu's for the 20 gram of Citra and 20 gram of Amarillo they will impact especially if you didn't cool the wort quickly, as Clint says it is hard to make an undrinkable beer but if this batch ends up on the bitter side I would suggest that is where it came from. Then again you may even like it.

True, the area between 100º and 75ºC is still able to extract bitterness, but below 75º ought to be just fine.

Thanks guys really appreciate the input, puts my mind at rest. Hard part now..... the waiting to taste

haha I a 15 and 30l fermenting vessel but starting slow trying to experiment buil knowledge befor going larger. Right now I have this brew in 3 1 gllon demijohns. 1 with wlp001, 1 with brew dog yeast and the other planning on maybe a bit dry hopping. Same brew 3 ways to see the diffrence. maybe over complicating but I figure maybe learn more from it this way
