psi for closed transfer of beer

Hi all,

I recently upgraded my equipment, so have a Fermzilla and a Corny Keg for the first time. I'm getting a 50/50 gas cylinder ( I brew a range of beer types). So a couple of questions I'm afraid.

My first brew will be a porter and I want to try to pressure ferment and then do a closed transfer into the keg.

As I'm new to this pressured world of pressure (feeling the pressure!) my questions are around - you've guessed it - pressure!

From what I understand, There are three main areas to consider:
  • Fermentation PSI - the spindle pressure I need to set on the Fermzilla during fermentation.
  • Transfer PSI - The pressure in the FZ and the Keg ahead of / during transfer
  • Keg Pressure PSI - the pressure I keep on the beer in the keg for pouring.

I'm thinking of:
  • Fermentation PSI - 11 psi
  • Transfer PSI - 11 psi (in FZ and Keg)
  • Keg Pressure PSI - 11 psi.

Is it that straight forward?

Foot transfer, no more than enough to get it moving.

There's a post on another forum by someone that exploded their glass carboy full of beer doing this.

If you are pressure fermenting, then no more than the fermenter pressure. As @dwhite60 says, you don't want to explode the fermenter! Although the Fermzilla will take a bit of pressure.

The Grainfather Conical has a pressure transfer adapter to keep pressure about 1PSI: Not because the fermenter will explode but because any more will lift the lid and waste gas. 1PSI is quite enough as long as the keg to be filled isn't upstairs!
 
Ales, do not apply pressure until around day 3 or when there is just a couple of points left to go, ale yeasts do not react well to pressure and dissolved co2. 10 PSI for transfer, I did put a post up somewhere on this forum showing how to transfer from fermenter to keg. Also use the co2 from the ferment to purge your keg.
I serve my kegs at 10 PSI.
 

Check out around the collar of the FermZilla there are a lot of issues with stress fractures, KegLand are now addressing the faults that have been surfacing with the FermZilla and a new model is coming out soon.

Yeah that simple, that is around the numbers I currently use and have never had a problem. Using your spunding valve, only lower your keg pressure a little bit at first. so the first few liters transfers slowly.
 
Your numbers are more of less what I use, 10PSI all round,

Once kegged I don't use continuous pressure from my CO2 cylinder but rather as sson as I have transferred I top the keg up to 10PSI then shut the cylinder off, I only open the cylinder again when I am serving then shut it off straight afterwards
