Squeezing air out is a good idea, as is reducing the air space between the beer and the cap.
One other thing, NEVER shake the bottle to ensure the sugar / carb drop is mixed with the beer, no need and that will cause oxidation thumb.

I used to invert them a few times to mix the sugar in- I haven't on any of my AG beers and won't moving forward. I'll try and fill the bottles a bit fuller too see if that helps. Won't be checking if beer is fermenting so often either as a means to reduce risk- last brew I used M44 and it didn't look as if it was doing anything so I opened the fridge up more than I should have, this time will just leave it and trust the yeast for a couple of weeks I think.
 
Maybe I got 2 things mixed up then- does having the cooling wort open to oxygen darken the wort then? with an IPA I'd like to avoid that too.
Never had that personally, I brew in an all in one and use the pump and whirlpool arm to cool along with the chiller so it's stirring all the time, when it's cool enough to add to the FV I move the arm around and pump the wort into the FV from a height to induce oxygen for the yeast before I pitch. As @MmmmCitra has said M-44 is slow but is a decent yeast.
 
yes I don't think I'll be using M44 again; it was loose sediment in the Galaxy IPA; and too many worries if it was actuall working. I only really used it to have a change from US05 which I had been using till then/ I've never tried US 04.

I think eventually, budget allowing, I MAY for an all in one, outside my cash flow at the moment really... and I am not the most practical of people so the prospect of spending all that, not being able to use it properly and / or knackering it bothers me:laugh8:
 
US 04 is a more English strain and very good for hoppy beers, as I said earlier it's the one I used for this beer and it tastes great.......acheers.
 
M44 is notoriously slow to start, maybe try something else ??

I don't think I'll be using M44 again; it was a lot of loose sediment in the FV with the Galaxy IPA; and too many worries if it was actually working. Ironically I only really used it to have a change from US05; which I had been using till then. I've never tried US 04.
 
I recently split a batch of Citra Smash, half S04 and half US05. The S04 tasted great fresh but after a couple of weeks conditioning, my R&D tasting team (about 10 friends) voted 100% in favour of US05 in blind taste tests. The S04 tasted surprisingly good after just 3 days conditioning.

Interesting...I think I will go back to US05 and try S04 in the future, I am doing a porter then probably the Citra Simcoe then a first ever attempt at a bitter... So maybe the S04 will go nicely in the bitter?

Incidentally this is how the M44 Galaxy IPA which I fear had some oxygen issues looked out of the fridge last night, in natural light. It tastes alright but not very clean and looks quite dark to IMG_20200623_211307.jpg

You may be experiencing 'chill haze', next pint try leaving it at room temp and then see if it's any clearer. This will also make it look a little lighter as it's not so dense.

I have got one in the cupboard under the porch put aside to try this.... Perhaps it isn't oxidation then as it doesn't taste too bad... But I still think the finished product is darker than when I bottled it somehow.
 
Simcoe & Citra is one of my favourite combinations. I tried using MJ M44 on my latest batch & whilst pleased with the results, it obviously took much longer to ferment as at a much lower temp (12C v 19C). Next time I do similar, will probably just use something like s05.

Hi @RichK was there a reason for brewing M-44 at 12°C? it will quite happily sit at higher temperatures of around 22°C and not impart any off flavours, I use it for all my APA's.

No reason other than I was trying something different to see if I liked the result.

I love Citra. Simcoe I have had a lot in commercial beers and like what it brings flavour wise, so wanted a crack brewing with it... Hopefully I make a decent job of it. I'm going 05 too I think for this one to let the hops be the focus.
