I like to try stuff out, so maybe a shorter list than some.
Never used a kit or extract - in at the deep AG end.
Never done a yeast starter as I don't understand how you know or measure how much yeast you've made.
Never done much water chemistry as, once again, I don't think I understand it and I don't like doing things if I've not got my head around it.
And I've never brewed a Belgium style dubble, trippel or quad. And never done a lager either - hopefully change this next winter when I can use the great outdoors as a big fridge.

Similar to Harbe, never brewed a lager...... but I now have a brew fridge so it’s time to start hunting down recipes
Let me tell you, my CML Hell lager is on the money, having fermented at 16/17 and I have an Ubbe going now at 33. if that goes well its lager all year round for this brewing enthusiast. Will post a pic of my kegged lager on its first pour in a wee while, then one of the bottled one for comparison.

Never had any spillages or made any significant mess when doing an AG brew.

Granted, I've only done four individual gallons of AG to date and they've all been in the last couple of weeks...but I think that's pretty good going 😄

The longer you go without making a mess, the worse the mess will be when you finally do... FACT. lmao

Just wait for that day you leave a tap on a bucket open and start filling it or something...... Fun times. lol

Best wishes to you AdeDunn. It's not inevitable that sooner or later you're going to make a mess or leave a tap on. So there's no FACT there. The worst I've had is when my 30 year old immersion chiller developed a pin-prick hole and started filling up my boiler full of stout.
Best 3% mild I've ever made and none the worse for being diluted with unsteriised tap water.

I think I jinxed it with that post.

I got home from work this morning itching to get my next AG brew on, found that my wife had cleaned the hob...I'm talking ridiculously clean, so of course, the beer gods saw this as an opportunity and I inexplicably had a medium sized spillage of hot wort all over the previously immaculate cooker.

I managed to get it cleaned up to a reasonable standard before anyone noticed but that'll teach me for bragging 😞😄

My favourite mistake is to leave the cold tap going on the chiller whilst sorting the fermenter into the fermenting fridge and come back to a flooded kitchen. Probably manage to do this about 2 out of every 3 brews 😩

No doubt you angered the beer gods with your sobriety. A libation and a double-decker bacon and egg butty should be a minimum before even thumbing open the recipe book.

favourite mistake
Mine was intentional but a mistake all the same. I had no idea what an auto-siphon

was for in the beginning of my brewing career. I basically used it as a pump to suck in a full tube of beer and eject it into the the secondary, splashing the whole way. I pumped it hundreds? of times to fill the secondary. The beer still turned out fine...ish. In my defence, at the time, auto siphons didn't seem all that impressive to me.

Somebody left their sense of humour behind the sofa it seems. The clue was the lmao on the end, indicating a not at all serious post. athumb..

Yep, I made a pulley system to winch and hold up my BIAB over the Peco at the end of the mash but didn’t secure the pulley rope properly once. Blimey, didn’t half make a splash! Just lucky no one was standing too close.

I have Never;

Drank HB whilst brewing HB
Owned or used a trial jar for hydrometer samples, I throw it straight in.
Kegged a beer
used ant forced method of cabonation
Made any beer with a stupid strength like RIS

And the Big one I have Never been convinced by the quality of any CML yeast I have tried

I find their “standard” yeasts hit and miss. Their American and Real Ale yeasts I really didn’t like, but the Cali Common and Kolsch yeasts are great. I’ve not used any of their “premium” yeasts yet though.
