It sounds like you're into this kind of stuff so, if you've not had proper mole poblano then you're in for a treat - chicken (or properly, turkey) in a chilli/chocolate/spice sauce, with layer on layer of flavour.

It's great, but a pain to do properly - as this article describes, even the "easy" versions can involve 15+ ingredients and the fancy versions can use 30 or more. I think this is the LA Times article he references (if you have problems with their LAT paywall, the full text is in the HTML, just do Ctrl-U to view it and search for "Rosa" to get down to the article text). It can make for a fun alternative to the usual roast turkey at Christmas, originally it was very much a celebration dish.
