I can relate to that. Do you use the calculator on the site. I have a Belgian IPA which is well over.
Yeah the Brewer's Friend calculator. Getting carbonation right has always been a bit hit and miss for me.

I noticed a big difference between beers that I have cold crashed/layered compared to ambient temperature. I have also noticed a difference between yeasts. My Belgian IPA with T58 is well over yet I only went 2 vols were my Munich dunkel is under when I went 2.5 vols.

Drinking a coldish bitter tonight, rewarding a well earned thirst, spent half the day cutting back next door neighbours shrubs. She's madder than a cut snake but still has a great sense of humour.

Cracked open my GH bible DDH Pale Ale. Looks the part, smells the part and most importantly tastes the part. Head died away quite quickly but think that will improve with a bit of time (only 2 weeks in bottle). Absolutely luvverly. All that oxidation worry for nothing! Substituted the yeast to Lallemand Verdant and definitely think it brings something to the party :beer1:

Starting the weekend off with a bang.

Of Juice No.04 by Three Hills Brewing 9% DIPA

Smells very sweet like candy when poured, and tastes the same. A little too sweet I'd say, but quite nice with a slight earthy hoppy dankness. Strong alcohol taste due to the strength, but not in a harsh way.
 
Finishing the last couple of pints of my Summer Breeze ale because I have another batch ready to keg. 5.2%

I can't wait to get that one bottled up, and I still need to dry hop it. Will probably do a 25/25 gram dry hop split with citra and galaxy.

Good thing I have a citra mosaic ekuanot pale ready to bottle. Speaking of which I think you should try using the llalemand east coast yeast on this recipe. Or I will when I get some more galaxy and citra at some point. It should compliment the hops better than 05.
