De-gasing and clearing?

I'm part way through making a WOW grape juice and app!e it has fermented out, I have siphoned into a demijohn and fitted an airlock.

What now?

Do I add stabaliser and finings and when it's clear bottle?

At what point should I de-gas it?

The way i do it -

Rack into a sanitised DJ onto a crushed campden tablet, degas thoroughly, add stabiliser and stir (or shake gently) then add add finings and do as directed.

I have a degassing wand which makes the job much easier, i throw the stabiliser in then degas then add finings as instructed.
 
Add stabiliser first to stop the yeast. Shake the DJ to release gas. Do this several times a day for 2 days. THEN add the finings. Once finings are added place DJ in a cool spot and don't disturb it. Finally, rack off into a clean DJ before bottling (to leave the sediment behind.) To rack off, use a siphon.

If you rack to a clean DJ for degassing, clearing you can bottle directly from the DJ as there wont be much sediment left (that's how i have always done it)
 
I'm fairly new at this but bottled up 4 DJ's of wine - 2x blackcurrant, 1x redcurrant and 1x ginger. All had been racked once when sediment had built up too much and then fermented on until they stopped bubbling and settled. They looked clear so i didn't use any finings. Campden and stabiliser then next day I siphoned them off any sediment individually into buckets and then bottled using a jug and funnel. Pouring through a funnel into the bottles seems to have degassed satisactorily.....

Its completely up to you but normally you let the fermentation take place in the first DJ and only rack when its finished, the sediment packs down over time so when you come to rack to the second /dj the sediment trap on the syphon tube stays above the top layer of sediment.

Sediment was about 1.5 in deep and I was becoming concerned re effects from it's decomp?

Some are like that but it kind of settles when fermentation slows even if it doesn't it causes no harm and you you up the space you lose when you rack to the next DJ.
