Pataks curry paste makes a very good curry. It's loads better than all the jars of curry sauce in the shops.
 
I've just done a back-and-forth on whether fish sauce and clam juice can be substituted for one another. I accidentally bought clam juice instead of fish sauce--doh! The final verdict, after at least nine minutes of Googling opinions that I can't verify as being accurate, is that yes, they can be substituted for one another. I'm not overly worried since it's only going to be 1.5 tablespoons of the whole recipe.
I'm going to post a photo either tonight or tomorrow with a brutally honest opinion of the dish.
 
It's the same here. In fact, not only are some dishes on menus in Indian restaurants in the UK unknown in India, many restaurants are owned by Bangladeshis.
'curry' isn't even an Indian thing is it? I thought that it was a term adopted by the British based on 'kari / kaari' which I understood to mean gravy or sauce?

Are correct.

Its a generic term. 'Curry powder' was a spice mix invented by British Army cooks in the days of the East India Co.
It was used to heavily flavour and spice off and rancid meats to feed to the troops as they pillaged the nation.

Having travelled extensively all over india you wont find anything called madras or vindaloo anywhere.

What you will find are amazing and flavoursome regional dishes - meat or non meat varieties. Some fab street foods too. Ive eaten the lot! Even to food on the trains is fantastic. Chicken manchurian, flat breads, chicken lollipops spring to mind.

I will try and remember some of the resturant and shack items i enjoyed.

Oh. Last night i made a chicken curry to which i found on a fb page 'Nat and thats what i recon' Some Ozzy chap.



Its not mild. Rather like a thai red curry. Tasty. I follow the vid word for word and can recommend.

The curry dish turned out properly on my second attempt. I used thicker noodles, broiled cauliflower and carrots and, of course, made the sauce. We're sold on it though I think I like it more than my wife.
We went to an Asian store to get supplies that I didn't even know existed. The store was gigantic to the point of not being able to find supplies quickly.

Now you're on the curry Dave,next on your list should be Brown Sauce...great with chips (fries) fried eggs, sausages,bacon and black pudding..
