I believe it is well documented that the addition of hops creates enzyme activity which results in further fermentation- referred to as hop creep.
I have also got some CML Norse on the way - better start brewing! Have got some Warminster Lager malt which smells fantastic-

I quite like bottling I tend to do small 20 bottle batches takes about twenty minutes, I find it quite therapeutic.
