    I usually just lager in my Fermzilla, don’t even bother dumping the trub just reduce the temperature slowly to get it down to lagering temps and leave it for a month.

    I brewed with it on Saturday, and it kicked off by Sunday evening - looking very similar to ferments from Diamond and 34/70 that I’ve used in previous lagers. Lager yeasts do look a little different from ale yeasts when they ferment but I wouldn’t necessarily say drastically. I’ll take a photo...

    TM have been doing 3 for 2 on these the last couple of weeks. I picked up 2 Apres Ski for a Helles (I would usually use Diamond) and an old English for my first ever Imperial Stout.

    If I remember correctly I put the enzyme in the mash but it was so long ago I might be wrong. Also different manufacturers might have different instructions

    Yeah I made one back in 2019. It was fine, I just couldn’t be bothered buying the enzyme again 😂 I used some new world NZ hops which probably didn’t really help but I got them cheap 😂

    Don’t worry about it, I’ve had similar issues with counter pressure filling - the best Helles I’ve ever brewed only scored 17 in the Scottish National comp last year for the same reason 😂

    The Philly Sour (and in this case the CML Sour 3.5) yeast never quite gets them as sour as I’d like either - as well as the Percy’s I added caster sugar because these yeasts like simple sugars in the souring stage but I’d still like it more lip-puckering!

I think I overhopped the saison (although I did follow the hopping levels of the recipe), some glasses of it I thought “that’s lovely” and others I was thinking “the hops are too much and clashing...

    I find my counter pressure bottling can be inconsistent as well so was wondering if that could have been a factor too.

    I just had my Belgian Red and unfortunately I think mine was oxidised. First swig was incredibly bitter, second swig was definite sherry, third swig I decided I couldn’t drink anymore. It’s a shame, and just one of those things, because it looks like you enjoyed yours.
