    Using Lalvin EC-1118 yeast instead of the yeast that's included in the kit.

    EC-1118 is my "go-to" yeast, It will ferment just about anything to absolute bone dryness. I have fermented apple juice with it to very high strength,But the result has allways tasted like super strong dry white wine. Not at all like cider. Give it a try and see if you like the result.

    Up here in Scotland the ground is often frozen solid for weeks at a time. Please don't get me wrong,I am not a green energy denier. When I was young I could stand just about anything. But not anymore these days I really feel the cold.

    IN this regard I should also mention "Heat pumps", An apparently "Over unity" device. They do their best work when the outside temperature is sweltering (Just when you don't need any more heat). As it gets colder they come closer and closer to unity. ie electric fires !!!

    My parents got an air frying pan years ago,Found it rusting in the garage when i had the sad duty of clearing out their home. However today's self contained units are a different story. These mini steamers and fryers can cook delicious (and healthy food ) Well worth the investment.
